Ingredients
- 1/3 c sugar
- 1/3 c water
- 1/4 c lemon juice
- 3 tbsp honey
- 1/2 tsp minced serrano pepper
- 1/4 c minced fresh mint
- 1 tbsp grated lemon peel
- 4c cubed watermelon, canteloupe and honeydew
Directions

In small saucepan combine the sugar, water, lemon juice, honey and pepepr. Bring to a boil. Cook 3-5min or until slightly thickened. Remove from heat stir in mint and lemon peel.

Cool to room temp. Strain syrup discard pepper mint and lemon peel.

In large bowl combine melons. Add syrup gently toss to coat. Cover and refrigerate for 2 hours. Stir several times. Serve with slotted spoon.
