Lettuce Wraps

Ingredients
- 1/4 cup soy sauce
- 1/4 cup peanut butter
- 1/2 tablespoon molasses
- 1/2 cup rice vinegar
- 4 teaspoons sesame oil
- 1 teaspoon hot sauce
- 1 teaspoon cornstarch
- 1 teaspoon water, cold
- 2 tablespoons sugar
- 1/8 teaspoon pepper
- 1 pound lean ground turkey
- 1/2 cup carrot, shredded
- 1/2 cup spinach, chopped
- 1 cup mushrooms, chopped
- 2 tablespoons ginger, minced
- 4 garlic cloves, minced
- 1 can water chestnuts, drained and chopped
- 4 green onions, chopped
- 1 cup snow peas, chopped
- 1 head lettuce, washed and divided into leaves

Mix sauce: In a small saucepan over low heat, combine ingredients (soy sauce through pepper). Let simmer, stirring frequently, until sauce thickens and bubbles.

In a large skillet, cook turkey and carrot over medium heat until meat is no longer pink and carrot is tender; drain. Add ginger, garlic, spinach, and mushrooms; cook till mushrooms are cooked.

Stir in the chestnuts, green onions, snow peas, sauce; heat through. Divide among lettuce leaves. Fold lettuce over filling.
