Bacon Corn Quesadillas

Ingredients

  • 3 ears corn
  • 1 T. canola oil
  • 1/4 t. salt
  • 1/8 fresh ground black pepper
  • 8 6-inch flour tortillas
  • 2 cups grated monterey jack cheese
  • 1 cup cheddar cheese
  • 2 thinly sliced scallions
  • 16 slices bacon, cooked crisp and crumbled
  • 2 t. canola oil
  • 2 t. chili powder

Directions

  1. Husk corn. Brush with oil; sprinkle with salt and pepper. Grill 8 minutes. Cool. Remove kernels from cobs.

  2. Mix bacon, cheese, scallions and cut corn. Divide evenly between 4 tortillas. Top with another tortillas; brush tops with oil; sprinkle with chili powder.

  3. Grill oil side down for 2 minute; close grill and cook 2 additional minutes.
