Chicken Parmigiana

Ingredients

  • 4 chicken breasts
  • 1 6-oz. can tomato paste
  • 3/4 cup water
  • 2 clove garlic, minced
  • 1 T. parsley
  • 1 t. salt
  • 1/4 t. black pepper
  • 1/2 t. Italian seasoning
  • 1/2 t. oregano
  • 1/4 t. red pepper flakes, optional
  • 2 cups shredded mozzarella cheese
  • 1/4 cup Parmesan cheese

Directions

  1. Place chicken breasts in a greased 8" square baking pan. In a saucepan, combine tomato paste, water, garlic and seasoning; bring to a boil. Pour over chicken.

  2. Bake, uncovered, at 400 degrees for 15-20 minutes or until chicken juices run clear. Sprinkle with cheese; bake 10 minutes longer or until the cheese is melted.
