Chicken and Roasted Red potatoes

Ingredients

  • 1/4 cup Ranch dressing
  • 6 large chicken thighs
  • 4 slices bacon, cooked and crumbled
  • 1 1/2 lb. red potatoes cut into chunks
  • 1 onion, diced
  • 1 cup shredded cheddar
  • 2 tbsp parsley

Directions

  1. Pour dressing over chicken in shallow dish. Marinate in fridge 30 min

  2. Heat oven to 400

  3. Saute potatoes and onions in bacon grease

  4. Mix in bacon and mix lightly

  5. Spoon into 13 × 9 baking dish

  6. Remove chicken from marinade and place over potato mixture

  7. Bake 55 -60 min

  8. top with cheese and parsley
