Cheddar Mashed Potato Casserole

Ingredients

  • 2 lb Potatoes
  • 2 TBSP Butter
  • 1/2 cup sour cream
  • 1 cup shredded cheddar
  • 6 slices bacon, cooked & crumbled

Directions

  1. Cook potatoes in boiling water in large saucepan for 20 min. Drain and return to pan

  2. at oven to 350. Add butter and sour cream to potatoes, mash until smooth. Spoon half into casserole dish. cover with layers of cheese. add remaining potato mixture and top with bacon. Bake 30-35 min or until heated
