Fiesta Beef and Black Bean Enchiladas

Make w/o Black Beans for Rob

Ingredients
- 1 lb ground beef
- 1/2 lb. velveeta, cuped
- 1 1/4 cups salsa
- 1 cup black beans, rinsed
- 12 flour tortillas (6")
- 1/4 cup cilantro, chopped
- 1/2 cup sour cream
Directions

heat oven to 350

Brown meat, drain, stiring half the velveeta and 1/2 cup salsa. Heat until melted. Stir in beans. Spoon 1/4 cup mixture down center of each tortilla. roll up. pace seam side down on 12 x9 pan. Bake uncovered 10 min then top with rest of cheese and salsa. Bake 20 more min. Top with sour cream and cilantro
