Lasagna

Ingredients

  • 1 lb. ground beef
  • 3 8-oz. cans tomato sauce
  • 1 6-oz. can tomato paste
  • 2 t. basil
  • 1 t. salt
  • 1 8-oz. lasagna noodles
  • 1 T. vegetable oil
  • 2 eggs
  • 1 16-oz. container cottage cheese
  • 3/4 cup grated parmesan cheese
  • 2 t. parsley
  • 1 t. salt
  • 1/2 t. black pepper
  • 2 8-oz. pkgs. sliced mozzarella cheese

Directions

  1. Cook ground beef until browned; drain off fat. Stir in next four ingredients. Cover; simmer 15 minutes, stirring often. Meanwhile, cook noodles according to package directions. Drain; rinse noodles.

  2. Beat eggs; add cottage cheese, 1/2 cup parmesan cheese, parsley, salt and pepper. Layer in 9×13 pan as follows:

  3. 1/2 noodles

  4. 1/2 cottage cheese

  5. 1/2 mozzarella cheese

  6. 1/2 meat sauce

  7. Repeat layers

  8. Bake at 375 degrees for 30-35 minutes. If assembled and refrigerated, bake 45 minutes. Cool 10 minutes.
