Grilled Romaine with Blue Cheese Bacon Vinaigrette

Ingredients
- 4 T. olive oil
- 3/4 cup finely diced red onion
- 1/2 lb. bacon
- 1/2 cup balsamic vinegar
- 3 romaine heads, cores remove, leafy ends trimmed, cut in 1/2 lengthwise
- 1/2 cup blue cheese
- fresh ground black pepper
Directions

Heat 1 tablespoon olive oil in skilled. Add onion and bacon; cook until bacon is crispy. Remove from pan.

Add vinegar and 1 tablespoon olive oil. Reduce for 2-3 minutes.

Brush romaine with 2 tablespoons olive oil. Place cut side down on grill. Sear until grill marks are visible.

Place lettuce on plate; drizzle with balsamic dressing. Sprinkle with bacon, onion, fresh ground black pepper and blue cheese.
