Best Black Bean Soup

Serves 4 people
Ingredients
- 2 16 oz cans black beans, undrained
- 14.5 oz chicken or vegetable stock
- 1/2 cup salsa
- 1 tbsp chili powder
- Juice of one lime
- 1/2 cup sour cream
- 1 small onion, diced fine
- Minced cilantro
- Shredded cheddar cheese
Directions

Pour beans into a medium saucepan, and with a potato masher, mash until beans are approx 50% broken down.

Add stock, salsa and chili powder, bring to a boil and simmer for 15 min. Add the lime juice.

Serve the sour cream, onion, cheese and cilantro in small bowls for garnish.
