Spaghetti with Bacon & Eggs

  1. Cook pasta according to package directions. Reserve 1/2cup cooking water. Drain pasta and return to the pot.

  2. Meanwhile, cook the bacon in a skillet until crisp. Break into pieces.

  3. Wipe out skillet and return to medium heat. Crack eggs into skillet. Cook until whites are set but yolks are runny, 3-4 min.

  4. Toss the pasta with the bacon, 1/2cup of Parmesan, 1/2tsp salt, 1/4tsp pepper, and reserved pasta water.

  5. Divide the pasta among bowls and top with eggs. Sprinkle with remaining 2 TBSP of Parmesan.
