Ingredients
- 1 1/2lbs Cubed Beef
- 2TBSP Shortening
- 1/2c Water
- 5 medium yellow Squash or Zucchini
- 1 medium Onion, sliced thin and separated into rings
- 2c Corn
- 1c Chopped Green Chiles
- 2 cloves Garlic minced
- 1c grated Monterey Jack Cheese
Directions

Brown Beef in Shortening at med-high heat and then add water. Cover and simmer until tender, adding more water if needed. (about an hour)

Add remaining ingredients (except cheese) and cook until squash is tender.

Garnish with cheese before serving.
