Camp Squash

Ingredients

  • 4 Zucchini or Yellow Squash, sliced
  • 2 Garlic Cloves, minced
  • 1TBSP Olive Oil
  • 1/2c Shredded Mozzarella
  • 2TBSP chopped, Fresh Basil
  • 2TBSP grated Parmesan Cheese

Directions

  1. Cook squash in oil in large skillet on medium heat for 3 minutes. Add garlic and cook for 3 minutes more, until crisp-tender.

  2. Remove from heat. Stir in mozzarella and basil.

  3. Sprinkle with Parmesan.
