Chicken Parmesan

Ingredients

  • 4 boneless chicken breast
  • 3 eggs
  • garlic powder
  • olive oil
  • emeril's garlic pasta sauce
  • 1 box panko bread crumbs
  • 1/4 cup parmesan cheese
  • Mozzarella Cheese about 1/2 cup
  • 1 cup white wine
  • 1 stick real butter and 1 tablespoon
  • 1 box of fettechini
  • mushrooms - 1 small box of whole or chopped, or 1 large can
  • 1 tablespoon of minced garlic
  • 1 med onion
  • 1 Tablespoon of capers

Directions

  1. cut chicken in half

  2. flatten with meat tenderizer

  3. in a bowl big enough to dip the chicken pieces, beat the 3 eggs, in a seperate bowl, pour panko bread crumbs and add 1/4 cup of shredded parmesan.

  4. In a skillet, add oil to coat bottom, heat until oil is hot then dip chicken into egg to coat both sides and then dip into panko bread crumbs and coat both sides, then add to skillet. Cook until browned on both sides. Once brown on both sides, add chicken into large baking dish.

  5. Cover with pasta sauce, sprinkle mozzerlla cheese over chicken and bake on 375 until chicken is done.

  6. Cook pasta according to directions.

  7. In separate skillet, saute mushrooms, onions, and garlic until softened with 1 Tablespoon of butter. Then add stick of butter to melt. Then add wine and capers and cook until boiling. Let boil for a few minutes then add the noodles.

  8. Stir until noodles are covered then remove from heat.
