Creole Black Beans

Ingredients

  • 2lbs Smoked Sausage, cut into 1" pieces
  • 3 15oz cans Black Beans, drained
  • 1 1/2c chopped Onion
  • 1 1/2c chopped Green Pepper
  • 1 1/2c chopped Celery
  • 4 cloves Garlic, chopped
  • 2tsp Thyme
  • 1 1/2tsp Oregano
  • 1 1/2tsp White Pepper
  • 1/4tsp Black Pepper
  • 1/4tsp Cayenne Pepper
  • 1 Chicken Bouillon Cube
  • 5 Bay Leaves
  • 8oz can Tomato Sauce
  • 1c Water

Directions

  1. Brown sausage in skillet over medium heat. Drain fat and transfer to crock pot.

  2. Combine remaining ingredients in crock pot.

  3. Cover and cook on low 8 hours.

  4. Remove bay leaves. Serve over cooked rice.
