Buckwheat Barley Waffles

Ingredients
- 1 cup buckwheat
- 1 cup barley flour
- 2 eggs
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 TBS brown sugar
- 1 tsp vanilla
- dash of cinnamon
- dash allspice or nutmeg
- 1 1/2 cups buttermilk (can use combination buttermilk and regular milk/soy milk)
- 1/2 cup applesauce
Directions

Mix all dry ingredients.

Beat eggs and milk, add applesauce and vanilla and mix.

Mix all ingredients and add more milk if batter seems too dry/thick.

Pour into waffle iron and cook as directed.

Serve with maple syrup or with savory soup/stew.

Makes 4 large round waffles.
