Ingredients
- 1 lb. chicken breast or ground turkey
- 2 cans Rotel
- 1 packet taco seasoning
- Corn tortillas, warmed
- Taco toppings (i.e., sour cream, chopped lettuce, shredded cheese, etc.)
Directions

Brown ground turkey, or dice chicken breast and cook until heated through and no longer pink. Drain any excess fat and return to pan.

Add Rotel, taco seasoning, and half the amount of water advised by your taco seasoning mix packet. Simmer until heated through and sauce thickens.

Fill warm tortillas with meat and top as desired.

Serve alone or with Mexican-style rice or beans.
