Rice Pilaf (Basic)

Some add-ins you could consider: Roasted slivered almonds, chopped cashews or diced water chestnuts would be good with an Asian entrée. When serving with chicken, you could add diced pimentos. Sliced mushrooms sautéed with the onions would be good with a beef dish. You could also use diced red pepper and/or celery and sauté with the onions.

Prep time: 10 minutes
Cook time: 40 minutes
Serves 6 people

Ingredients

  • 2 T. butter
  • 1/2 C. orzo
  • 1/2 C. onion, diced
  • 2 cloves garlic, minced
  • 1/2 C. white rice
  • 2 C. chicken broth
  • 1/2 t. salt
  • 1/4 t. pepper
  • 1/4 C. slivered almonds, toasted (optional)

Directions

  1. Sauté the orzo in butter until golden. Add the onion and sauté until translucent. Add the garlic and cook another minute.

  2. Add the rice, broth, salt and pepper. Bring to a boil, cover, reduce heat and simmer for 20-25 minutes.

  3. Let stand covered for 5 minutes. Fluff rice, add almonds (if using) and serve.
