Chicken Scampi

This recipe is converted from a shrimp scampi recipe. If you prefer shrimp, add 1 lb. fresh shrimp cleaned and deveined in place of the chicken.

Ingredients
- 1 lb. linguine
- 2 T. olive oil
- 2 T. butter
- 1 pinch red chili pepper flakes (optional)
- 4 cloves garlic, chopped
- 2 C. diced cooked chicken
- 1/4 C. white wine
- 1 lemon, juice and zest
- 1 T. butter
- 1 T. parsley, chopped
- Parmesan cheese
Directions

Cook the pasta as directed on package. Drain, reserving some pasta water.

Heat the oil and butter in a large sauté pan over medium heat. Add the red chili pepper (if using) and garlic and sauté until fragrant, about 1 minute.

Add the chicken and sauté until heated through; remove from pan and set aside.

Add the wine, lemon juice and zest to the pan and bring to a boil. Simmer until reduced by about half, about 3-5 minutes. Add the butter, wait for it to melt; add the chicken, pasta and parsley, toss to coat and warm through.

Serve with parmesan.
