Grilled pepper, buffalo mozzarella and rocket salad

Ingredients
- 2 red peppers and 2 yellow peppers, halved and deseeded
- 5 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 2 x 125g balls buffalo mozzarella
- 50g packet wild rocket
Directions

Preheat the grill to high.

Place the pepper halves cut-side down on a baking sheet and grill until the skins are charred. Put in a bowl, cover with cling film and leave to cool.

Peel off the charred skin, then cut each pepper in half. Reserve 3 tablespoons of the pepper juices in another bowl and combine with the olive oil and balsamic vinegar to make a dressing. Season well.

Tear the mozzarella into small pieces.

Divide the rocket between serving plates, followed by pieces of red and yellow pepper and finally the mozzarella pieces. Drizzle each plate with the dressing.
