Broccoli Cheese Soup

Ingredients

  • 1/3 C chopped onion
  • 1 T butter or margarine
  • 5 C chicken broth
  • 1 pkg (8 oz.) fine egg noodles
  • 1 pkg (10 oz.) chopped frozen broccoli
  • 1 garlic clove, minced
  • 4 C milk
  • 3/4 lb. Velveeta

Directions

  1. In a large saucepan over medium heat, saute onion in butter until tender. Add broth; bring to a boil. Add noodles; reduce heat and cook for 3 minutes. Stir in broccoli and garlic; cook for 4 more minutes. Add milk and cheese. Cook over low heat until cheese is melted.
