Pumpkin Bread

Ingredients

  • 5 eggs
  • 1-1/4 C vegetable oil
  • 1 can solid-pack pumpking (15 oz.)
  • 2 C all-purpose flour
  • 2 C sugar
  • 2 pkgs (3 oz. each) cook and serve vanilla pudding mix
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Directions

  1. In a mixing bowl, beat the eggs. Add oil and pumpkin; beat until smooth. Combine remaining ingredients; gradually beat into pumpkin mixture. Pour batter into two greased loaf pans. Bake at 325 degrees for 75-80 minutes or until toothpick inserted near the center comes out clean. Cool on wire racks
