Ingredients
- 5 eggs
- 1-1/4 C vegetable oil
- 1 can solid-pack pumpking (15 oz.)
- 2 C all-purpose flour
- 2 C sugar
- 2 pkgs (3 oz. each) cook and serve vanilla pudding mix
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt

In a mixing bowl, beat the eggs. Add oil and pumpkin; beat until smooth. Combine remaining ingredients; gradually beat into pumpkin mixture. Pour batter into two greased loaf pans. Bake at 325 degrees for 75-80 minutes or until toothpick inserted near the center comes out clean. Cool on wire racks
