Zesty Breakfast Skillet

Ingredients
- 2 large potatoes, diced with skins on
- 1 medium onion, diced
- 1 package bacon, chopped
- 1/2 can black beans, drained and rinsed
- 1 can Rotel, drained
- 1 tbsp ground cumin
- 1 clove garlic, pressed
- 9 eggs
- Shredded cheddar or jack cheese, optional
Directions

Fry bacon in large skillet until almost crispy. Add potatoes, onion and garlic, and heat until bacon is crispy and potatoes are cooked through.

Stir in black beans, Rotel, and cumin.

Clear a small space in the center of your pan. Beat eggs in small bowl, then pour into pan. Scramble, mixing with the other ingredients as the eggs cook.

Top with shredded cheese and serve.
