Quick and Easy Veggie Tortellini Soup

An inexpensive, easy soup with lots of flavor and healthy veggies.
Prep time: 10 minutes
Cook time: 30 minutes
Serves 6 people

Ingredients
- 1 package fresh or frozen cheese tortellini
- 8 cups vegetable stock
- 2 cans diced tomatoes
- 2 small zucchini, chopped
- 1 cup mushrooms, chopped
- 3 medium carrots, sliced
- 1 bunch fresh basil, chopped
- 2 cloves garlic, pressed
- Salt (optional)
Directions

Pour stock into large pot. Add tomatoes with juice, zucchini, mushrooms, carrots, basil and garlic.

Bring to a boil, reduce heat, and simmer until vegetables are cooked to almost desired tenderness.

Bring soup back to a boil, add tortellini and cook for 3-5 minutes until both pasta and vegetables are tender.
