- 6 cups veggie stock
- 1 cup raw cashews
- 1 onion, chopped
- 1 carrot
- 1 clove garlic
- 1/2 large red bell pepper
- 2 medium potatoes, cubed
- 1 large head broccoli
- 2tsp dried thyme
- salt

blend cashews in 1 cup veggie stock

cook onion carrot in 1 cup veggie stock for 5 mins, add pepper and spuds, cook for 2 more mins. Add rest of stock, add everything else cover and simmer 10 mins. Add cashew mix, puree in blender
