Ingredients
- 1-1/4 lb beef, 1-inch thick strips
- 2- 3oz packages oriental RAMEN noodle soup pkgs
- 2 cups water
- 1-1/2 tsp cornstarch
- 2 TBS vegetable oil
- 1/2 lb (about 4 cups) broccoli florets
- 2 medium carrots ( thin strips)
Directions
- into a medium bowl toss beef strips with seasoning packets from soup, 1/2 cup water and cornstarch.

In a large nonstick skillet, heat 1 TBS oil over medium high heat until hot. Add broccoli, carrots: stirfry 1 minute. break noodles into several large pieces; add to the skillet with 1-1/2 cups water ( making sure to moisten all noodles), bring to a boil. Cover and simmer over LOW heat 3 to 5 minutes or until vegetables are tender and almost all liquid is absorbed, sirring occationally to separate the noodles. Transfer to a warm platter.

In the same skillet, heat remaining 1 Tbs oil over medium heat until hot. Remove beef from marinade and stir-fry, 1/2 at a tome, for 1 to 2 minutes. Spoon beef and pan juices over noodles and serve.
