Farro & Apple Salad

Also good with wheatberries instead of farro and with added chicken breast

Ingredients
- 1 cup farro (green spelt)
- 1/4 cup walnuts, toasted, chopped
- 1/2 cup dried cranberries
- 3 scallions sliced
- 2 celery ribs, diced
- 1 Granny Smith, cored, cubed
- DRESSING:
- 1/2 cup light mayonnaise
- 1/3 cup sour cream or plain yoghurt
- 2 tbsp rice vinegar
- 3 tbsp apple juice
- salt and pepper to taste

Cook farro according to instructions on bag

In a mixing bowl, combine mayonnaise, sour cream (or yoghurt), vinegar, and apple juice. Mix the dressing with the cooled farro, walnuts, cranberries, scallion, cerelry, and apple. Season with salt and ppoper to taste.
