Ranch Salad with Roasted Vegetables

Ingredients

  • 1 lb red potatoes cut into 1" cubes
  • 2 carrots cut into 1/4" thick slices
  • 1 small red onion cut into thin wedges
  • 1 tbsp olive oil
  • 1 pkg torn romaine lettuce
  • 1/3 c light ranch dressing
  • 2 tbsp grated parmesan

Directions

  1. at oven to 425.

  2. Combine first 4 ingredients in 15×10×1 pan.

  3. Bake 25 min or until tender stir after 15 min. cool 5 min.

  4. Toss lettuce with dressing place on 4 serving plates. Top with veggie mixture and cheese.
