Ingredients
- 1 lb red potatoes cut into 1" cubes
- 2 carrots cut into 1/4" thick slices
- 1 small red onion cut into thin wedges
- 1 tbsp olive oil
- 1 pkg torn romaine lettuce
- 1/3 c light ranch dressing
- 2 tbsp grated parmesan
Directions

at oven to 425.

Combine first 4 ingredients in 15×10×1 pan.

Bake 25 min or until tender stir after 15 min. cool 5 min.

Toss lettuce with dressing place on 4 serving plates. Top with veggie mixture and cheese.
