Ingredients
- 2 C Sugar
- 2 1/4 C Flour
- 2 t Baking Powder
- 1 t Salt
- 1.5 t soda
- 2 t Cinnamon
- 2 t Pure Vanilla
- 1 1/3 C Oil
- 2 C Grated Carrots
- 4 Eggs
- 1 C Drained Crushed Pinapple
- 1 1/2 C Chopped Pecans
- Frosting:
- 8 oz Cream Cheese
- 1 stick butter
- 2 t Vanilla
- 1 box powdered sugar
Directions

Mix dry ingredients in large mixing bowl; add remaining ingredients and mix for 2 minutes or medium speed. Pour into 3 greased 9 inch pans. (or use 9×13 pan) Bake as directed.

Mix softened cream cheese and butter, add vanilla and powdered sugar. Frost cool cake
