Dijon-crusted chicken breasts

Ingredients

  • 1/3 C dry bread crumbs
  • 1 T grated parmesan cheese
  • 1 tsp italian dressing
  • 1/2 tsp dried thyme
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 boneless skinless chicken breast halves (4 oz. each)
  • 2 T dijon mustard
  • 1 tsp olive oil
  • 1 tsp margarine

Directions

  1. Place the first six ingredients in a shallow bowl. Brush chicken with mustard and roll in crumb mixture. In a large non-stick skillet, cook chicken in oil and margarine over medium heat for 5-6 minutes or until meat is done.
