Coconut Lime Bars

Ingredients

  • 1/2 c (1 stick) unsalted butter, melted
  • 1/2 c packed light brown sugar
  • 1 c sugar
  • 3 large eggs
  • 2 c flour
  • 1/2 tsp fine salt
  • 1/2 c chopped macadamia nuts
  • 1 tbsp finely grated lime zest
  • 1/2 tsp pure vanilla extract
  • 1 package (7oz) sweetened shredded coconut

Directions

  1. eheat oven to 375. Butter a 9" square baking dish, line with parchment paper, leave 2" overhang. Butter parchment.

  2. In large bowl whisk butter, brown sugar, and 1/3 c sugar. Add 1 egg whisk until smooth. Stir in 1 c flour, salt, nuts and lime zest. Spread batter into pan. Bake until top is set and very light golden 15-18 min.

  3. In medium bowl whisk together 2/3 c sugar, 2 eggs and vanilla. Reserve 1/2 c coconut; stire remaining coconut and 1 c flour into egg mixture. Gently spread over base, top with reserved coconut. Bake until golden. 25 min. Let cool completely on wire rack.
