Sauteed Spinach and Mushrooms

Ingredients

  • 3 tbsp olive oil
  • 1 lb mixed mushrooms, stems removed
  • 2 garlic cloves
  • 1 medium shallot minced
  • coarse s/p
  • 5 oz baby spinach (about 5c)

Directions

  1. In skillet heat 2 tbsp oil over med high. Add all mushrooms, cook undisturbed 2 min. Continue to cook stir occasionally until mushrooms are golden brown about 5 min.

  2. Add 1 tbsp oil, 2 garlic cloves minced, and 1 medium shallot cook stirring until shallot is softened 3 min.

  3. Season s/p.

  4. Add spinach cook stirring until wilted 2 min.
