Glazed Salmon with Spicy Broccoli—for 1

Ingredients

  • 2 tsp veggie oil
  • 1 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 garlic clove minced
  • 1/4 tsp red pepper flakes
  • 1 tbp apricot jam
  • 1 skin on salmon fillet (6oz)
  • non stick spray
  • 1 1/2 c broccoli florets
  • cooked brown rice for serving

Directions

  1. Heat broiler rack in middle position. In small bowl combine oil, soy sauce, vinegar, garlic and red pepper flakes. Divide mixture in half.

  2. Place salmon on broilerproof rimmed baking sheet lightly coated with cooking spray. Brush salmon with jam mixture and broil until fish is opaque throughout about 10 min.

  3. Meanwhile set a steamer basket in a saucepan with 2" water, add broccoli and steam until crisp tender, 4 min. Toss broccoli with remaining soy sauce, serve over rice.
