Brie Mashed Potatoes

Ingredients

  • 4 lbs. potoatoes, peeled and cubed
  • 1 C milk
  • 1 round (8 oz.) brie cheese, rind removed and cubed
  • 2 T butter
  • 2 tsp minced fresh thyme
  • 1 tsp salt
  • 1/2 tsp pepper

Directions

  1. Place potoatoes in a dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender; drain. In a large mixing bowl, mash the potatoes with milk, cheese, butter, thyme, salt and pepper.
