Maple Walnut Muffins

Very moist, buttery, walnut crunch, and subtle maple flavor. A little too subtle? I’d up it a bit, maybe with maple extract. Mama liked them, and they are a nice treat to have with morning tea.

Ingredients

  • 2 eggs
  • 3 tablespoons walnut oil or unsalted butter, melted or super-softened
  • 1/4 cup maple syrup
  • 1/2 cup milk
  • 1/2 cup whole wheat pastry flour
  • 1/4 cup wheat germ
  • 1/4 cup oat bran
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 cup chopped walnuts, plus some for good luck

Directions

  1. In a bowl or food processor, mix together the eggs, oil or butter, maple syrup, and milk.

  2. In another bowl combine the flour, wheat germ, bran, baking powder, and baking soda. Process briefly, then stir in nuts.

  3. Preheat oven to 350F and spoon the batter into greased muffin cups. Bake for 20 to 25 minutes or until toasty brown.
