Moroccan style carrots

Ingredients

  • 4 to 6 carrots
  • 1 Tbs. olive oil
  • 1 to 2 garlic cloves, chopped
  • 1 tsp. paprika
  • Salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cumin
  • 1/4 tsp zatar (optional,in which case you don't have to add salt)
  • 1Tbs. fresh lemon juice

Directions

  1. Peel carrots and place in a skillet with water.Bring to a boil for 10 to 15 min. until carrots are soft. Remove carrots from water and cool for 10 min.

  2. Cut carrots into thin rounds. Add olive oil, lemon juice, chopped garlic, paprika, cumin, zatar, or salt and pepper. Mix together and serve.
