Mexican Layered Salad

Ingredients

  • 4 C torn romaine
  • 1 large cucumber, peeled, halved and sliced
  • 3 medium tomatoes chopped
  • 2 medium ripe avocados, pealed and sliced
  • 1-1/2 C mayonnaise
  • 1/4 C canned chopped chilies
  • 2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1 C crushed tortilla chips
  • 1/2 C shredded cheddar cheese

Directions

  1. In a 2 quart trifle bowl or glass serving bowl, layer the first five ingredients. Combine the mayonnaise, chilies and seasonings; spread over the top. Sprinkle with chips and cheese. Serve immediately.
