Vanilla Ring Cake

Ingredients

  • 1 C shortening
  • 2 C sugar
  • 4 eggs
  • 2 T vanilla extract
  • 3 C all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 C buttermilk
  • DRIZZLE
  • 1 C confectioners' sugar
  • 1 to 2 T milk
  • 1/2 tsp vanilla extract

Directions

  1. In a large bowl, cream shortening and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and baking soda; add to the creamed mixture alternately with buttermilk, beat well after each addition. Pour into a greased 10 inch fluted tube pan. Bake at 350 degrees for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Combine the drizzle ingredients; drizzle over cake.
