Creamy Broccoli with Cashews

Ingredients

  • 9 C fresh broccoli florets
  • 1/4 C chopped onion
  • 2 T butter
  • 1 cup sour cream
  • 2 tsp honey
  • 1 tsp cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 C coarsely chopped cashews

Directions

  1. Place broccoli in a steamer basket; place ina large saucepan over 1 inch of water. Bring to a boil; cover and steam for 3-4 minutes or until crisp-tender. Meanwhile, in a small skillet, saute onion in butter until tender. Remove from the heat; stir in the sour cream, honey, vinegar, salt and paprika. Transfer broccoli to a serving bowl. Add sour cream mixture and toss to coat. Sprinkle with cashews. Serve immediately.
