Fourth of July Cherry Pie

This can be done with fresh apples, about 3 lbs. Then cover the raw pie with aluminum foil, and bake 1 hr 15 min. to cook the fruit.

Ingredients

  • 4 cups flour
  • 4 T sugar
  • 2 t  baking powder
  • 1/2 t salt
  • 1 & 1/2 C shortening [ butter or butter & Crisco]
  • 1/2 C sour cream
  • 1 egg yolk [save the white!]
  • 4 cans cherry pie filling
  • 1 egg white
  • 1 t water

Directions

  1. Shift together or mix thoroughly the flour, sugar and baking powder.  

  2. Cut in the butter or shortening.

  3. Add and mix thoroughly the sour cream and egg yolk.

  4. Form the dough into two balls and chill at least 4 hours, or overnight. [ I find I can roll the dough out right after mixing.  If I chill the dough, it has to warm up to be workable.]

  5. Roll out to fit 10 × 15 inch jelly roll pan.  

  6. Fill with pie filling.

  7. Roll out an place top crust. Cut to vent.  

  8. Brush with mixture of egg white and water.

  9. Sprinkle w. sugar.

  10. Bake at 350 for 30 minutes.
