Minestrone

Ingredients

  • 1/2lb ground sirloin, sauteed
  • 1 medium onion, chopped course
  • 1 large carrot, chopped course
  • 1 stalk celery, chopped course
  • 2 gloves garlic, chopped course
  • 1 cup shredded cabbage
  • 2 beef bouillon cubes, in two cups water
  • 1 8oz can tomato sauce
  • 1/2 tsp sage
  • 1/2 tsp thyme
  • 1/2 tsp dried basil leaves
  • Salt and pepper to taste

Directions

  1. Put above ingredients in large saucepan and simmer for 1hr or more. Then add:

  2. 1/2 cup frozen peas

  3. 1/2 cup frozen green beans

  4. Cook for 20 minutes, then add:

  5. 1/2 cup cooked small macaroni

  6. 1 8oz can red kidney beans, washed and drained

  7. If too thick, add more water.

  8. Sprinkle with grated Parmesan or Romano cheese.
