Hawaiian pineapple pasta salad

Ingredients

  • 2 T olive oil
  • 1 T rice vinegar
  • 2 t brown sugar
  • 2 c orzo, cooked
  • 1 c unsweetened pineapple chunks with juice
  • 1 sweet red pepper, diced
  • 2 scallions, bias sliced
  • 2 T snipped fresh parsley

Directions

  1. To make dressing: whisk oil, vinegar, sugar, coriendar and paprika

  2. To assemble: combine remaining ingredients and dressing.
