Ingredients
- 1 9 oz pkg frozen artichoke hearts
- 1/2 t salt
- 4 chicken breasts, boned
- freshly ground black pepper
- 8 slices lean bacon
- 4 T sweet vermouth, optional
- 1 c chopped canned tomatoes, preferably Italian plum
- 1 c sharp cheddar, grated

Preheat oven to 350

Thaw the artichoke hearts, sprinkle with salt and arrange them at the bottom of a baking dish. Place chicken breasts on top of artichokes, seasoning slightly with pepper. Lay bacon slices together over chicken and spoon vermouth all over

Bake at 350 for 45 minutes. Drain off excess fat. Combine the tomatoes with the cheese and spoon over chicken. Cook for 15 more minutes, adding more vermouth if desired. For golden brown color, broil for 1 minute.
