Ingredients
- 1/2 cup uncooked spelt or wheatberries
- 1 cup quionoa
- 3/4 cup black beans
- 2 tsp EVO
- 2 large minced garlic
- 1 red onion chopped
- 1 yellow pepper chopped
- 3/4 cup of raisins
- 1/4 cup roasted almonds chopped
- Dressing:
- 1/2 cup fresh lemon juice
- 1 tsp apple cider vinegar (optional)
- 3 TBSP EVO
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes (or less if you don't like spice)
Directions

Cook grains. Place in a large bowl. In skillet- add 2 TBSP EVO and garlic. Cook a couple of minutes. Add onion and saute for 6-8 minutes. Add chopped pepper/raisins/almonds and cook another 5 minutes. Prepare dressing. Pour dressing in skillet and stir.

Pour veggies and dressing into grains. Stir well and serve. Makes 6 cups.
