High Protein Quinoa Almond Berry Salad

Ingredients

  • 3/4 cup dry quinoa
  • 1 pint sliced strawberries
  • 16 oz. fresh blueberries (2 cups)
  • 1 cup cherries sliced and pitted
  • pinch kosher salt
  • 2 TBSP maple syrup
  • 1 tsp balsamic vinegar
  • 1 TBSP fresh lime juice
  • 1/2 cup chopped almonds

Directions

  1. Cook quinoa. Chop fruit and place in a large bowl. Mix dressing ingredients in small jar and adjust taste if necessary. Fluff cooked quinoa with a fork and add to bowl of fruit. Pour on dressing and mix well. Service immediately or refrigerate.
