Ingredients
- 1 cup uncooked quinoa
- 1 can black beans
- 1 red pepper chopped
- 1/4 cup fresh cilantro chopped fine
- 2 green onions chopped
- 1 cup fresh corn- optional
- 1 small avocado cut into 1 inch pieces
- Dressing:
- 4-5 TBSP fresh lime juice (2 limes)
- 1/2 tsp. sea salt to taste
- pepper to taste
- 1 large garlic clove minced
- 1/4 cup EVO
- 1/4 cup fresh cilantro finely chopped
- 1/2 tsp cumin to taste

Cook 1 cup of quinoa. While it is cooking prepare the chopped veggies and whisk together dressing. Allow quinoa to cool 5 minutes then fluff with a fork. Add beans and veggies. Toss well. Drizzle dressing on salad. Bring salad to room temp before service. Makes 5 cups. Keeps in fridge for 2 days.
