Ermanno’s Rice Salad

Italian refreshing summer salad- one of our favorites!

Ingredients
- Arborio rice
- Zucchini
- Summer Squash
- Red onion- chopped
- cherry tomatoes- quartered
- Capers
- Fennel - chopped
- Kalamata olives or green olives
- Basil- chopped fine
- Peas
- Asparagus
- Cucumbers
- 1/2 lemon
- Extra virgin olive oil
- salt and pepper to taste
Directions

Cook arborio rice to al dente. Rinse off with cold water. If you are adding zucchini/summer squash/fennel/asparagus…boil for a few minutes to soften. Chop and dice veggies for salad. Add chopped/diced veggies to rice. Add capers and chopped red onion and olives. Add chopped basil. Squeeze fresh lemon into rice and add EVO (1-2 TBSP). Add sea salt and pepper to taste.
