Ingredients
- 1 box of cous cous
- 1 zucchini - diced
- 6 TBSP EVO
- salt and pepper to taste
- one lemon
- 1/2 cup chopped onion
- 1/2 cup chopped parsley
- 1/2 cup chopped mint
- crushed red pepper (to taste)
- Sunflower seeds
- 1/3 cup roasted almonds- chopped
Directions

Cook cous cous. Fluff with fork. Saute zucchini and onions with EVO for 5 minutes. Season with salt and pepper. Stir in zucchini/almonds/onions/parsley/and mint. Season with salt and pepper. Add EVO and fresh squeezed lemon juice. Combine well.Serve or refrigerate.
