Refreshing Pasta Primavera

Ingredients

  • package penne pasta
  • 1 yellow squash- diced
  • 1 zucchini- diced
  • 1 carrot- juliened
  • 1/2 red pepper- julienned
  • 1/2 pint grape tomatoes
  • 1/3 cup chopped parsley
  • 1/3 cup chopped basil
  • 1 lemon
  • 1/4 large onion chopped
  • 2 cloves garlic
  • 3 Tbsp balsamic vinegar
  • salt and pepper
  • 1/4 cup EVO
  • Romano cheese- shredded or grated

Directions

  1. Cook penne pasta al dente. Saute squash/zucchini/onion/garlic/carrot/bell pepper/tomatoes with 2 TBSP EVO and salt and pepper. Add cooked pasta. Mix in parsley and basil. Add fresh squeezed lemon juice and balsamic vinegar. Sprinkle with Romano cheese on top.
