Ingredients
- package penne pasta
- 1 yellow squash- diced
- 1 zucchini- diced
- 1 carrot- juliened
- 1/2 red pepper- julienned
- 1/2 pint grape tomatoes
- 1/3 cup chopped parsley
- 1/3 cup chopped basil
- 1 lemon
- 1/4 large onion chopped
- 2 cloves garlic
- 3 Tbsp balsamic vinegar
- salt and pepper
- 1/4 cup EVO
- Romano cheese- shredded or grated
Directions

Cook penne pasta al dente. Saute squash/zucchini/onion/garlic/carrot/bell pepper/tomatoes with 2 TBSP EVO and salt and pepper. Add cooked pasta. Mix in parsley and basil. Add fresh squeezed lemon juice and balsamic vinegar. Sprinkle with Romano cheese on top.
