Vegetarian Chili

Cook time: 120 minutes
Serves 6 people

Ingredients
- 1 onion diced
- 5 cloves garlic minced
- olive oil
- 1 can black beans
- 1 can pinto beans
- 1 can kidney beans
- 1 28 oz can diced tomatoes
- 1 14.5 oz can petite diced tomatoes
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 2 jalapeno peppers diced
- 1 7 oz can green chilies
- 1 cup frozen corn
- 1 12 oz can of light beer
- salt to taste
- chili powder to taste
- smoked paprika to taste
- cayenne pepper to taste
Directions

Saute onions and garlic in soup pan until the onions are translucent.

Add all other ingredients and bring to a boil, stirring occasionally.

Bring to a simmer (no cover).

The longer you cook it the better it is!

Add shredded cheese or sour cream on top.
